Pumpkin spice lattes, pumpkin pie, pumpkin mufins …everything has pumpkin in it this season. Not that it’s a bad thing, it’s SO good, everything is just better with some pumpkin added! If you hate to cook and are no master chef but are just dying for a plate of pumpkin pancakes, then this easy pumpkin pancake recipe is for you. Using a boxed pancake mix, canned pumpkin, and simple spices (pumpkin pie spice has it all in one: cinnamon, nutmeg, ginger, and allspice) then topped with a decadent splash of warm vanilla butter syrup… your mouth won’t know what hit it!
Easy Pumpkin Pancakes with Vanilla Butter Syrup
Makes about 4 – 6 pancakes
1 cup Pancake Mix
1/3 – 1/2 cup Water
1/2 can Pumpkin Puree
1-2 tsps. Pumpkin Pie Spice
1 cup Syrup (your favorite store brand is fine)
1/2 tsp. Pure Vanilla extract
1 tbs. Unsalted Butter
Mix pancake mix, water, pumpkin puree, and pumpkin pie spice in bowl by hand until well-combined. Heat pan and melt a little butter, coating pan. Pour in batter, filling about 2/3 of pan– use less for smaller pancakes and more for larger pancakes.
For the vanilla butter syrup, simply combine the syrup, vanilla, and 1/2 tbs butter in microwaveable dish. Heat for about 30 seconds to melt belt and stir. Heat additional 30 seconds at 15 second intervals.
When bubbles form along the edges, you’re ready to flip! Once done cooking the other side, remove to plate drizzling warmed Vanilla Butter Syrup all over your pumpkin pancake stack and get to munching… these won’t last long!
