I always feel super healthy when drinking green juices… and I should! Kale is an excellent source of vitamins, antioxidants, as well as fiber and sulfur, both of which are great for detoxifying; Kiwi is a superfood, abundant in Vitamin C, which is especially beneficial for youthful looking skin; and parsley, which is an herb chock full of vitamins, not just a pretty garnish. Good stuff!
I’ll be honest though, I absolutely despise the taste of celery so despite it’s health benefits, I leave it out of my juices, but I want you to have the full benefits so I left it in the recipe. You’re welcome 😛
Mean Green Monster Juice
1 bunch Kale, rib removed
1/2 bag Spinach
2 Green Apples, cut and cored
1 bunch Parsley
2- 4 Celery Stalks
Juice from half a lemon
Cut veggies and fruits as required for juicer. Juice all together, adding the juice of half a lemon. With adding 1 cup water, makes approximately 36 ounces. Store up to 3-4 days in lidded container in refrigerator.
Make it a smoothie! Add 1 banana, 1-2 tablespoons of chia and/or flax seeds, and about 1/3 cup of Greek yogurt to 1 – 1 1/2 cups of juice. Blend with ice.
