Happy Friday, friends! Glad to see you all survived the week– this was a busy one for me with a 2-day sales meeting and getting caught up after the fact. To celebrate the end of the week I thought I would share a yummy, easy and unique take on standard ol’ tacos. I mean, how can you not like tacos?
Like I said, this recipe is so easy and quick, especially because I totally use short cuts– canned beans, store-bought taco shells– if you want to go all homemade, go for it!
Beef & Black Bean Tacos
Ingredients:
1 lb. Ground Beef
1 15 oz. can Black Beans
2 tsp. Chili Powder
1 tsp. Garlic Powder
1 tsp. Cumin
1 tsp. Paprika
1 tsp. Coriander
Pepper and Salt
1 16 oz. jar red Salsa (get your favorite– mild, spicy, chunky, etc.)
Your favorite toppings:
Shredded Lettuce
Diced Tomatoes
Chopped Cilantro
Chopped Green Onions
2 tsp. Chili Powder
1 tsp. Garlic Powder
1 tsp. Cumin
1 tsp. Paprika
1 tsp. Coriander
Pepper and Salt
1 16 oz. jar red Salsa (get your favorite– mild, spicy, chunky, etc.)
Your favorite toppings:
Shredded Lettuce
Diced Tomatoes
Chopped Cilantro
Chopped Green Onions
Shredded Cheese (I use a Mexican mix)
Guacamole or Avocado Salsa (recipe here)
Pico de Gallo
Sour Cream (or substitute Greek Yogurt)
1 box Taco Shells (or make your own 8-10 shells)

Salsa or hot sauce
Brown ground beef on medium heat, breaking into crumbles and drain. Add seasonings, stirring to mix. Drain and rinse can of black beans and add to pan, stirring to mix. Cook about 5 minutes and then add jarred salsa, cook for another 3-4 minutes to heat through.
Fill tacos starting with meat and bean mixture and then add your favorite toppings– cheese, lettuce, sour cream, whatever you love or have on hand. Happy eating 🙂
