Basically I created a simple syrup with the blueberries that I then mixed with lemon juice and water- SO good and SO easy. It’s a refreshing blend of sweet and tart. If you’re not a huge blueberry fan you can use this same basic recipe and any other berry of your choosing– strawberries, raspberries, blackberries, snozberries… okay well hopefully not those 😛 (I looked up what snozberries were once and um yeah, that was a mistake. My childhood memory of Willy Wonka has been forever tainted!). Anyway, here is the recipe:
Summer Sippin’: Blueberry Lemonade
Hope you all had a fun Fourth of July weekend! I had a very laid back weekend, which was good! Thinking of the Fourth, I had made a (DELICIOUS!) mixed berry trifle and had the bright idea of buying blueberries in bulk and ended up with WAY more leftover than I even used in the trifle. Like, my fridge is basically packed with blueberries. Oops! Luckily I had another bright idea to mix up some blueberry lemonade yesterday and you guys, it is SO good. Points for bright ideas!
Blueberry Lemonade
Ingredients
3/4 – 1 cup Fresh Lemon Juice
4 cups Water
1/2 cup Sugar
1 cup Blueberries
Ice
In a saucepan on medium heat, combine the sugar and 1 cup water to make the simple syrup. Stir until sugar has dissolved and then add blueberries, bringing to a boil. Turn down the heat and allow to simmer for about 3 minutes while the blueberries ‘burst’. Pour blueberry syrup through a fine mesh sieve and allow to cool.
Once cooled, combine the blueberry syrup with lemon juice, and water in a pitcher, stirring until mixed. Serve in an ice-filled glass and garnish with additional lemon slices and blueberries. Enjoy!
