“Oops I did it again, I bought too much fruit, it got lost in my fridge…oh baby, baby” Okay, okay I’m done with the Britney Spears. I really did buy too much fruit… again… so I did what any gal does when life hands her too much watermelon—make watermelon lemonade! Perfect timing too since today is National Watermelon Day!
Did you know that watermelon is like, 92% water? Aside from being a refreshing and hydrating natural thirst quencher, it’s also packed full of good for you nutrients such as potassium, amino acids, antioxidants and vitamins. This juicy melon is the perfect snack for hot summer days, and is even better mixed into another summertime must: lemonade! Follow the easy steps below to make your own refreshing watermelon lemonade:
Watermelon Lemonade
Ingredients:
3 cups Watermelon, cubed
½ cup Lemon Juice, freshly squeezed (4-5 lemons)
1 cup Sugar
4 cups Water
Put watermelon cubes in blender and puree until smooth. Strain juice through fine mesh strainer to catch excess pulp. Put in fridge to chill. To make simple syrup*, combine the sugar and 1 cup water in a saucepan on medium-high heat. Stir until sugar has completely dissolved. Let cool.
Add watermelon juice, fresh squeezed lemon juice, simple syrup (start with half and then add more to desired sweetness) and about 3 cups water to a pitcher, stirring to combine. Refrigerate and chill until ready to serve. To serve, add ice to a glass, pour in watermelon lemonade and garnish with lemon, piece of watermelon and/or mint. Bottoms up!
