TBH I’m really not much of a sports fan, but you know what I can get on board with? Game day munchies, especially if hot wings (boneless please, I can’t do the whole bone-in thing!) are involved. I recently made these Buffalo Chicken Salad Lettuce Wraps for a sports-themed potluck at work and they were a huge hit! The soft Bibb lettuce provides the perfect vessel for the yummy buffalo chicken salad, which combines the best of hot wings: buffalo sauce, celery, and bleu cheese. You won’t even miss regular ol’ hot wings!
Not only are these yummy… and healthy-ish… to munch on, they can work as a meal. Keep reading for this easy-peasy recipe:
Buffalo Chicken Salad Lettuce Wraps
2 Chicken Breasts, cooked and shredded
1 Celery stalk, diced
1/2 Onion, diced
1/4 c Carrots, shredded
1/8 c+ Plain Greek Yogurt (or Mayonaise)
1/8 c+ Frank’s RedHot Buffalo Wings Sauce Sauce
Butter/ Bibb Lettuce
Cook chicken breast and shred, set aside and allow to cool. Meanwhile, add extra-virgin olive oil to pan over medium heat and add diced celery and onion; cook until onion is translucent. In mixing bowl, combne shredded chicken, cooked celery and onion mixture, and shredded carrots. Add 1/8 cup plain Greek yogurt or mayonaise and 1/8 cup buffalo sauce– if mixture is too dry, add more yogurt and/or buffalo sauceand stirring to mix.
Break off washed and dried lettuce leaves and add a scoop of chicken salad mixture to middle of leaf. Top with ranch dressing and a sprinkle of bleu cheese. Yum! This chicken salad is also fantastic with crackers, you can even serve it as a dip.
